“Sutlach kon portokal i agua de flor”
What better way to celebrate the festival of Shavuot soon than to offer a delicate milk-based pudding Sütlaç the Jews of Rhodes island inherited from the Ottoman gastronomy.
I like to set a layer of this creamy milk pudding over a tangy fresh orange pudding fragrant with orange blossom water.
The Sephardim of the east Mediterranean customarily decorated their homes with greenery and fresh flowers, especially roses so Shavuot is also known as “Festival of the Roses”.
I like to drizzle a vibrant, pink raspberry syrup, scented with rosewater over the “Sutlach kon Portukal“ then top with crushed pistachios for an added crunch and scatter rose petals from the garden.
This easy to make light dessert can be served family-style in one dish, or looks elegant in individual glasses revealing the glorious colors. Whichever way you present this pudding it’s such a delightful showstopper!
