Individual dainty cheese tartlets are a speciality in the Greek Islands especially during Easter. The Sephardic Jews of Rhodes Island adapted these pleated star-shaped pastries encasing a luscious cheese and potato filling. They are called gizadas de keso y patata in Ladino (derived from the Spanish quesadillas for cheese turnovers). Although they are a little time consuming, Gizadas make an elegant savory nibble for brunch, as part of a meze or any gathering.
